To increase understanding and interest in Japanese food in general by introducing foods, alcoholic beverages, and food culture from various regions of Japan to the general public in the U.S., and by communicating the appeal of cooking and processing techniques that make the most of ingredients, as well as the functionality and flavor of foods.
